Ingredients
- 1 cup Quinoa
- 1 cup Almond flour
- 1 cup Chickpeas
- 1 cup Cherry tomatoes
- 2 cups Spinach
- 1 whole Avocado
- 2 tablespoons Olive oil
- 2 tablespoons Lemon juice
- 1 teaspoon Salt
- 1 teaspoon Pepper
Instructions

1. Cook the quinoa
Rinse 1 cup of quinoa under cold water. Cook it in a pot with 2 cups of water. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes, or until all the water is absorbed.
2. Prepare the dressing
In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 teaspoon of salt, and 1 teaspoon of pepper.


3. Combine the ingredients
In a large mixing bowl, combine the cooked quinoa, 1 cup of chickpeas, 1 cup of halved cherry tomatoes, 2 cups of spinach, and 1 diced avocado.
4. Add dressing and mix
Pour the dressing over the quinoa mixture and toss gently until everything is well coated.


5. Serve
Transfer the power bowl to serving plates and enjoy immediately, or store in the fridge for meal prep.
