Ingredients
- 1 cup cooked quinoa
- 1 cup black beans
- 1 cup corn
- 1 cup cherry tomatoes
- 1 whole avocado
- 1 cup shredded cheese
- 1 tablespoon taco seasoning
- 1 tablespoon cilantro
- 1 tablespoon lime juice
Instructions
1. Prepare the base.
In a bowl, combine the cooked quinoa, black beans, and corn. Mix in taco seasoning and lime juice.
2. Add vegetables.
Halve the cherry tomatoes, slice the avocado, and add them to the quinoa mixture.
3. Top with cheese and cilantro.
Sprinkle shredded cheese on top and garnish with fresh cilantro.
4. Serve immediately.
Divide the mixture into bowls and serve while warm.
