Ingredients
- 1 cup instant rice
- 1 cup canned black beans
- 1 cup frozen corn
- 1 1/2 cup shredded cheese
- 1 1/4 cup salsa
- 1 avocado
Instructions
1. Cook the rice.
In a microwave-safe bowl, combine 1 cup of instant rice with 1 cup of water. Microwave on high for 2 minutes.
2. Add the beans and corn.
Once the rice is done, stir in 1 cup of canned black beans (rinsed) and 1 cup of frozen corn. Microwave for an additional 1 minute.
3. Top with cheese and salsa.
Remove from the microwave and sprinkle 1/2 cup of shredded cheese on top. Drizzle with 1/4 cup of salsa.
4. Garnish and serve.
Slice the avocado and place it on top of the bowl before serving. Enjoy your quick and delicious meal!
